75 Medium Challenge: Week 11 (FINAL WEEK!) Recap (Meal Ideas, Workouts, and Inspo)

Week 11 of 75 medium is down and we are counting down the final days! In case you missed week 1, week 2, week 3 , week 4, week 5, week 6, week 7, week 8, week 9, and week 10 recaps, there are plenty of other meal ideas for 75 medium there. If you are also doing the 75 medium challenge (or the 75 Hard or 75 soft challenge), hopefully these posts can give you some healthy meal ideas and inspiration or (at the very least) solidarity– I know that’s what I sometimes have the most difficulty with!

75 Medium Week 11 Recap

The final week! I am going to work on a full recap post chronicling my thoughts on the journey as a whole, tips, and favorite meals, but the end of this journey was timed perfectly! I am going to Isle of Palms, SC the day after this challenge is complete and won’t have access to a gym. I didn’t mean to time things this way, but it worked out great!

I am so glad I did this challenge and that I am now in the routine of working out daily. It doesn’t feel like a chore now: it is just something I do. I overall feel so good, and want to keep doing consistent exercise to maintain how I feel. No regrets!

Day 71/75 (3/6/24)

Exercise: Active recovery day– did lots of walking and took a 45 minute walk after dinner

Weight: 135 pounds (down 5 pounds from Day 1)

Reading: Tipping Point by Malcolm Gladwell

Breakfast: Protein bar + collagen coffee

Lunch: Chicken sandwich and cheesy grits

Dinner: Takeout Chinese food– I ordered scallion chicken with veggies and white rice

Also snacked on lots of sweets today (because it was my birthday!), but honestly didn’t eat a ton of each thing

Day 72/75

Exercise: 45 minutes on stationary bike

Breakfast: coffee and fruit

Lunch: leftover Chinese food

Dinner: crock pot honey garlic chicken— added broccoli, cabbage, carrots, and spinach with white rice

Day 73/75

Exercise: Gym for arms and abs: Abs: rotary torso machine and ab coaster; Arms: Pull ups, hammer curls, delt pulls, and weighted rows

Breakfast: Kodiak cake waffles with blueberries

Lunch: Crackers with pimento cheese and an apple

Dinner: Grass-fed beef burger with sauteed onions, pimento cheese, avocado and a side of roasted purple sweet potatoes

Day 74/75

Exercise: Gym for leg day

Breakfast: Breakfast burrito with egg, chicken sausage, spinach, purple sweet potato, avocado, and hot sauce

Lunch: smoothie (blueberries, spinach, protein powder, milk, and yogurt) and crackers with pimento cheese

Dinner: Baked crunchy corn flake crusted chicken (I use this recipe from Half Baked Harvest but use Red Clay Hot Honey instead of making my own– the peach one is AMAZING) with roasted brussel sprouts

Day 75/75

Exercise: Gym for abs, back, and arms

Breakfast: Quiche with brussel sprouts, bacon, and tomatoes (didn’t really follow a recipe; however, this one I made with sausage, gouda, and spinach has similar proportions and cooking time)

Lunch: Leftover chicken + apple and peanut butter

Dinner: spaghetti squash with meat sauce

What I ate in a day at 20 weeks pregnant with a hi What I ate in a day at 20 weeks pregnant with a history of gestational diabetes! I am trying my best to follow the diet I followed with my 1st pregnancy. Fingers crossed I don’t have GD this time around though (being tested at 24 weeks 🫩) 

Breakfast: viral spring roll “bagel” filled with sausage, egg, and cheese + matcha latte with @fairlife milk and sugar-free vanilla syrup from @torani 

Supplements: prenatal and probiotic from @gardenoflife choline from @naturemadevitamins, and vitamin D

Lunch: chicken&pork gyoza, soy sauce + apple

Snack: PB protein cereal from @ghostlifestyle and @fairlife milk

Dinner: viral sheet pan beef “kebabs” with low-carb wrap from Ole, roasted zucchini, tomato, feta, tzatziki, and hummus

Bedtime snack: low-carb vanilla Greek yogurt and @sevensundayscereal granola

Dinner: turkey burger bowls with roasted sweet sweet potato, lettuce, avocado, salsa, and spicy ranch

Bedtime snack: @fairlife chocolate milk (THE BEST!!!)

18 weeks pregnant (still sick!) but have much more 18 weeks pregnant (still sick!) but have much more of an appetite than last week! Because I had gestational diabetes in my first pregnancy, I am mostly following the GD diet while I wait to take my glucose test 🫩 I have what my carb goals were highlighted in my stories!
Feta, egg, sweet potato bake was modified from @jenneatsgoood 
Lunch was leftover yogurt marinated chicken + a whole what couscous pasta salad I made loaded with tomatoes, cucumbers, olives, feta, asparagus, bell pepper, olive oil, and lemon juice.
Snack was PB protein cereal from @ghostlifestyle 
Dinner was crockpot pesto ranch chicken with asparagus and @barillaus protein pasta!
Bedtime snack was @toogoodandco vanilla yogurt and @sevensundayscereal granola.

This is a great project to use up fabric scraps and an old bed sheet with no sewing machine required.
You will need an iron, fabric, fabric scissors, a printer, Heat N Bond, and hem adhesive. Hopefully this tutorial is helpful to anyone trying to make a similar birthday banner without sewing experience. Here’s what I ate in a day pregnant: SICK EDITION 🤧 my dietician had told me back with my first pregnancy that your blood sugars are going to be naturally higher when you are sick, so if you are checking blood sugars while sick and with gestational diabetes, it may be harder to keep them in range. Because I had gestational diabetes in my pregnancy Because I had gestational diabetes in my pregnancy with my son, I’m being carb-conscious while I wait to take my glucose test at about 24 weeks pregnant. I’m roughly following the guidelines I was given back in 2022, but obviously not monitoring blood sugars at this time since I don’t officially have a diagnosis at this time.
