Costco Chicken Bake Copycat Recipe

People show a lot of love the the inflation-proof Costco hotdog for $1.50, but I would argue for justice for the Costco chicken bake. Sure it’s not $1.50, but if you don’t think that pizza dough stuffed with Caesar dressing, chicken, bacon, and cheese sounds like the best food ever– you’re objectively wrong.

Whenever I would tag along with my parents to Costco as a kid, I would split a chicken bake with my mom. As an adult, when I got my own Costco membership, I wondered “is the Costco chicken bake actually good or did I just think that as a kid?“. Turns out– it holds up to my childhood memory.

It is so easy to make at home, and recently I’ve started making it along side our regularly scheduled Friday pizza nights! I like this enough that I think I might enjoy it more than the pizza.

Easy Cast Iron Pizza

You can use whatever cooked chicken you want, but if you want the BEST experience, I recommend using cooked rotisserie chicken. I normally pick up the famous $5.99 rotisserie chicken whenever I go to Costco and will use it for lunches or a dinner (example: the best chicken pot pie you’ll ever taste) and whatever we don’t eat immediately, I will remove the chicken from the bones and freeze the chicken for recipes later on. I also free the bones/carcass to make bone broth later. While using rotisserie chicken in the Costco chicken bake is my favorite option, using just plain grilled chicken will work great too!

Also you can use whatever Caesar dressing you want– if you make homemade, go for it! But as far as store-bought brands go, I think the Ken’s Creamy Caesar and the Newman’s Own Creamy Caesar are the best! The trick for a golden top to the Costco chicken bake is brushing the top with the same Caesar dressing that is on the inside of the bake. It helps it to get a gorgeous golden crust. Also topping it with a little bit of additional mozzarella and Parmesan cheese helps!

Costco Chicken Bake Recipe

Servings 3 bakes

Ingredients

  • 1 pound pizza dough
  • 3/4 cup caesar dressing
  • 1 cup mozzarella cheese shredded
  • 1 cup cooked chicken cubed
  • 1/2 cup cooked bacon pieces
  • 3 tbsp Parmesan cheese grated

Instructions

  1. Preheat oven to 400℉

  2. Divide pizza dough into 3 pieces. Roll out and toss each piece until a long oval or rectangle is formed.

  3. Between the 3 bakes you will be forming, divide out the caesar dressing (reserve about 1 tablespoon for later), chicken, bacon, and mozzarella cheese (also reserving some for topping later).

  4. Once each of the bakes is filled, slightly fold in the shorter sides to tuck them in before rolling the bake to wrap all of the contents.

  5. Transfer the bakes to a lightly greased baking sheet. Use a brush to brush on the reserved caesar dressing onto the tops of each of the bakes. Then top with reserved mozzarella and the Parmesan cheese.

  6. Bake for 12-15 minutes. Let rest for about 5 minutes before cutting in half and enjoying.

Supplements: prenatal and probiotic from @gardenoflife choline from @naturemadevitamins, and vitamin D

Lunch: chicken&pork gyoza, soy sauce + apple

Snack: PB protein cereal from @ghostlifestyle and @fairlife milk

Dinner: viral sheet pan beef “kebabs” with low-carb wrap from Ole, roasted zucchini, tomato, feta, tzatziki, and hummus

Bedtime snack: low-carb vanilla Greek yogurt and @sevensundayscereal granola

Because I had gestational diabetes in my first pregnancy, I am mostly following the GD diet while I wait to take my glucose test 🫩 I have what my carb goals were highlighted in my stories!

Dinner was crockpot pesto ranch chicken with asparagus and @barillaus protein pasta!

Because I had gestational diabetes in my pregnancy Because I had gestational diabetes in my pregnancy with my son, I’m being carb-conscious while I wait to take my glucose test at about 24 weeks pregnant. I’m roughly following the guidelines I was given back in 2022, but obviously not monitoring blood sugars at this time since I don’t officially have a diagnosis at this time.
