Our first apartment was about a block from a California Pizza Kitchen, and while they have some pretty good pizza at CPK, the best thing on the menu? The Avocado Club Egg Rolls. They are egg roll wrappers stuffed with chicken, bacon, tomatoes, cheese, and avocado before being deep fried to perfection. And you serve them up with some spicy ranch? I am drooling while typing this.

I recently realized I had some egg roll wrappers in our freezer from a previous recipe, and for some reason was craving CPK’s avocado club egg rolls! I made this recipe easier by using rotisserie chicken from Costco instead of cooking my own chicken, but you could use whatever kind of cooked chicken you like.

I do think that the official California Pizza Kitchen avocado club egg roll calls for Monterey jack cheese instead of pepper jack. Because I was using rotisserie chicken, which is relatively plain, I think the pepper jack was perfect because it added a bit more flavor. Pepper jack cheese is essentially Monterey jack cheese with peppers added to it. I don’t think it is very spicy, but if you are super super sensitive, just opt for Monterey Jack!

How to Make Avocado Club Egg Rolls

Equipment Needed

Deep Skillet

I use this exact Cuisinart skillet for this recipe because it has tall sides for frying oil

Cooking Thermometer

I use a cooking thermometer almost exactly like this one to monitor the temperature of my oil. The temperature will drop when you add the egg rolls, so I can turn up the heat to try to keep it close to 375 all the time.

Stainless Steel Slotted Spoon, Tongs, or Spider Skimmer

Because you are cooking with hot oil, avoid using plastic utensils unless you want to risk them melting! I recommend using tongs to be able to flip the egg rolls in the oil and to remove them from the oil and transfer them.

Ingredients In Avocado Club Egg Rolls

  • Egg roll wrappers (I generally use this brand)
  • Cooked chicken: I use rotisserie chicken from Costco but you can prepare the chicken however you desire!
  • Cooked bacon
  • Pepper jack cheese
  • Tomato: I used quartered grape tomatoes, but you could use a roma tomato instead!
  • Avocado
  • Vegetable oil
  • Egg
  • Spicy ranch for serving (I especially like the Aldi Organic Spicy ranch)

How to Roll The Egg Roll

How to roll an egg roll

Lay an egg roll wrapper on a plate in front of you with a corner facing you. Using a pastry brush or your finger, brush the egg wash along all 4 sides of the wrapper.

Place a bit of the chicken, cheese, bacon, tomato, and avocado into the lower third of the wrapper, being sure not to over fill and leaving about an inch gap from the sides of the wrapper.

Fold the corner closest to you up towards the corner farthest from you, tucking the filling into a tight bundle. Fold the side corners over towards one another and the roll towards the farthest corner until all the corners are sealed.

Set aside and repeat with remaining rolls.

Avocado Club Egg Rolls

Servings 10 rolls

Ingredients

  • 10 egg roll wrappers
  • 2 cups cooked chicken chopped
  • 4 slices cooked bacon chopped/crumbled
  • 1 cup pepper jack cheese shredded
  • 1/2 cup tomato chopped
  • 1 avocado sliced
  • vegetable oil for deep frying
  • 1 egg
  • ranch or spicy ranch for serving

Instructions

  1. Fill a deep skillet with a couple inches of vegetable oil and begin to heat over medium heat, aiming for a temperature of 375 degrees

  2. Crack the egg into a small bowl and whisk with a splash of water to make your egg wash.

  3. Lay an egg roll wrapper on a plate in front of you with a corner facing you. Using a pastry brush or your finger, brush the egg wash along all 4 sides of the wrapper.

  4. Place a bit of the chicken, cheese, bacon, tomato, and avocado into the lower third of the wrapper, being sure not to over fill and leaving about an inch gap from the sides of the wrapper.

  5. Fold the corner closest to you up towards the corner farthest from you, tucking the filling into a tight bundle. Fold the side corners over towards one another and the roll towards the farthest corner until all the corners are sealed.

  6. Set aside and repeat with remaining rolls

  7. Working in batches of about 2-4 rolls (depends on the size of your pan), carefully add the egg rolls into the hot oil. Cook for about 1-2 minutes until golden brown before flipping to other side and cooking for an additional 1-2 minutes.

  8. Carefully remove egg roll and transfer to paper towel lined plate to drain excess oil.

  9. Repeat with remaining egg rolls.

  10. Serve while hot

I’m roughly following the guidelines I was given back in 2022, but obviously not monitoring blood sugars at this time since I don’t officially have a diagnosis at this time. Since I’m not checking my blood sugars rn, I’m trying my best to count carbs, adjust my portions, and make low-carb swaps where I can, with the knowledge that IF I get a diagnosis this pregnancy, I may have to adjust this diet further to reach my blood sugar goals. I’m also  trying to make my diet as nutritious as possible for myself and baby but in a realistic way! #gestationaldiabetes #whatieatinadayrealistic #pregnancy

I do think this is a good way to ease myself back into the diet in case I do test positive again. I’m still letting myself enjoy what I want rn but I’m adjusting my portions and making low-carb swaps where I can! After having a difficult first pregnancy and difficult postpartum, getting to a place mentally to feel ready for another pregnancy/postpartum took more time than I ever expected, and consumed me with a lot of anxiety. And then I faced conflicting feelings of sadness of not having the smaller age gap we originally hoped/wanted for our kids. Thankful for a supportive husband, 📣 THERAPY 🗣️, prayer, and friends who listen, to work through the hard stuff, get to a better mental space, and to feel peace to do this again.

This baby is truly so loved already and we cannot wait!!

Let’s cook some raspberries up and make some raspb Let’s cook some raspberries up and make some raspberry-fudge pudding popsicles with a secret healthy ingredient 🤫🥑

RASPBERRY FUDGE POPSICLES 🥑🍫
Raspberry Part:
-~6 oz of fresh/frozen raspberries
-2 tbsp of sugar (I used coconut sugar)
•add raspberries and sugar to a saucepan over medium heat. Cook and let boil for about 5-7 minutes, stirring often to get a jammy consistency

Chocolate Part
1 avocado
1/2 cup milk
2-3 tbsp cocoa powder (depending on how chocolatey you want it!)
Splash of vanilla
Pinch of salt
Maple syrup to taste
•add all to a blender and blend until smooth

•layer chocolate and raspberry portions in a popsicle mold. You can use a toothpick or wooden skewer to swirl the layer a bit before adding sticks and freezing for at least 6 hours
•you may need to run warm water outside of your molds to help remove the popsicles when you’re ready to enjoy ❤️

This makes 6 popsicles with the molds I have but it may vary depending on the size you are using. You also may have leftover raspberry sauce!! It’s really good on Greek yogurt for a parfait or on ice cream 😉 #healthydessert #kidrecipes #toddlermom #easyrecipe
