75 Medium: Week 9 Recap (Meal Ideas, Workouts, and Inspo)

75 Medium· Health

If 75 medium week 8 was my low point, week 9 is definitely my reception arc. I’ve had some really good workouts this week and with the weather getting nicer, I’m able to be outside more. I know my goal is to just do one workout a day but now that it is getting warmer, I definitely want to incorporate a long walk outside as well. In case you missed week 1, week 2, week 3 , week 4, week 5, week 6, and week 7 recaps, there are plenty of other meal ideas for 75 medium there. If you are also doing the 75 medium challenge (or the 75 Hard or 75 soft challenge), hopefully these posts can give you some healthy meal ideas and inspiration or (at the very least) solidarity!– I know that’s what I sometimes have the most difficulty with.

And just in case you have zero idea what the 75 medium challenge is, here is a video and a post to fill you in:

75 Medium Week 9 Recap

Week 9 I definitely feel myself getting back on track. I had a really good leg workout with my husband on day 61 to the point that I was feeling dizzy and had to grab a bagel after. Do I regret it? No. 3 days post that workout and I’m still really sore! We have a trip planned for April and I really want to be feeling fit for it (partially because I will be in a bathing suit and partially because there is a lot of hiking involved). So now I feel even more motivation to work harder. I only have a couple more weeks left of the 75 medium challenge, so even with the extension I am doing (due to week 8 stomach bug challenges), this trip might further motivate me. Although at this point, a lot of these things feel like a habit and they don’t feel like a chore so much anymore, so I WANT to keep doing them!

📍Win Son Bakery (East Village)
We both got the BEC which had the CRISPIEST bacon, egg, and havarti cheese and it came with their ginger deluxe sauce. I NEED to figure out the recipe to recreate the sauce because it was amazing 🥲
I also got their 5 spice latte which was so tasty and I loved that it wasn’t super sweet! #pregnancy #pregnancycraving #nyc
Guess who doesn’t have gestational diabetes? 🙂‍↕️ Guess who doesn’t have gestational diabetes? 🙂‍↕️
After having GD with my first pregnancy, I am SO relieved to not have to check blood sugars and be monitoring this time around— however, I’m still being mindful and conscious of my carbs, because I do think it’s better for me and baby (but I’m not being quite so restrictive now!!)

Breakfast: savory breakfast muffins (recipe on my page!)
Lunch: leftover sheet pan lasagna (recipe by @sara.haven) and raspberries
Snack: jalapeño chips, havarti, and dill pickles IYKYK
Dinner: fish, @brazi_bites, and roasted veggies
Bedtime snack: @fairlife chocolate milk always 🍫🥛

I recommend priming your sheets of plywood FIRST, then tracing your outline of the characters and then cutting them out! It makes it easier to see the image if you’re using a projector, and then it’s also easier to see your outline when you start painting!

I made two of these this year, one for my dad for his 80th (lol) and another for my toddler! I thought it was super a cute keepsake, and not very difficult, so I’m definitely going to keep making these for kid’s birthdays! 🥹 #birthdaycrown #keepsakegifts #birthdaytradition #slowliving #toddlermom
DIY “Terracotta” Pumpkins 🎃 I love the look of th DIY “Terracotta” Pumpkins 🎃
I love the look of the terracotta pumpkins, but knew I could DIY it for less 😌
Just mix up some baking soda into paint until it forms a gritty paste and apply a couple of coats to a cheap plastic pumpkin. On your last coat while it’s still a LITTLE wet, sprinkle on some additional baking soda and dust it around with a paint brush. #falldecorations #diyhalloween #halloweendecorations

I’ve never been super intentional about decorating I’ve never been super intentional about decorating my bedroom but with baby number 2 on the way, I now recognize that I need a lovely space to rot in the newborn bubble 👶 today I’m tackling bed styling (we have a king sized bed for reference). I tried my best to keep it on a budget bc WHYYYY are pillows so expensive??? #bedroomstyle #pregnancy #roommakeover
I made these carb-balanced/blood sugar friendly/hi I made these carb-balanced/blood sugar friendly/high protein breakfast muffins often in my first pregnancy and honestly have enjoyed them well beyond pregnancy! They’re only 5 ingredients and give the bready texture I was missing when I had gestational diabetes. It’s kind of similar to a sausage ball! I normally eat 2-3 muffins for breakfast as each muffin has about 7 grams of carbs and 12 grams of protein!

5-INGREDIENT SAVORY BREAKFAST MUFFINS
* 1 pound of turkey sausage (or whatever type you like)
* 4 eggs
* 1 cup shredded cheddar cheese
* 1 cup Kodiak cake baking mix
* 1/3 cup cottage cheese

Instructions
1. Preheat oven to 350℉ and spray a 12-cup muffin pan with non-stick cooking spray
2. In a pan over medium heat, add the sausage and crumble while cooking. Cook until no longer pink. Remove from heat and allow to cool briefly.
3. In a bowl, crack the eggs and lightly beat. Add shredded cheese, kodiak mix, cooked sausage, and cottage cheese and mix well (mixture will be thick)
4. Fill the 12 prepared muffin cups evenly with the mixture.
5. Bake for about 22-25 minutes or until golden brown on top

Recipe Notes
If meal prepping for the week, store leftovers in a container in the fridge. You can heat by microwaving for about 1 minute. I prefer to reheat them by microwaving a couple for 15-30 seconds and then pop them in the air fryer at 350 for 3-5 minutes.
