Simple 4 Ingredient Non-Dairy Coffee Creamer Recipe

Confession: There was about 3 years of my life that I took my coffee black. They were dark times, times when I convinced myself “I don’t need flavored creamer!” or “I’m being healthier this way!”. With a GOOD cup of coffee or espresso, there is actually a ton of flavor, and I don’t really need cream or sugar, but for our everyday brewed coffee, I really enjoy my life more with some flavored creamer. I grew up on Coffee-Mate creamer (specifically the peppermint mocha one YUM), but as I’ve gotten older, I try to opt with the ones with less chemicals and more things on the ingredients that I recognize and can pronounce. If I am getting a store-bought creamer, I really like the Chobani creamers or the Natural Bliss ones, but they do contain dairy. For store-bought dairy free, I like Nutpods creamer. But if remember to get the supplies to do so, I also love to make this super simple 4 ingredient non-dairy coffee creamer!

This non-dairy coffee creamer recipe is hardly a recipe. There’s no cooking involved, just some adding of ingredients to a jar and shaking to combine. But if you are like me and like to avoid dairy occasionally, this is a easy recipe to sub out some dairy from your diet!

Simple 4 Ingredient Non-Dairy Coffee Creamer

How to Make Non-Dairy Coffee Creamer

Into a jar, combine 1 can of unsweetened coconut milk, maple syrup (I normally add a couple tablespoons, but adjust to your desired sweetness!), 1 tsp of ground cinnamon, and 2 teaspoons of vanilla extract. Then I just add a lid and shake it vigorously until the maple syrup combines with everything. Add to coffee as desired. Store it in the refrigerator up to 4-5 days.

Is Homemade Non-Dairy Coffee Creamer Healthier?

It depends on what you consider healthier. It is less processed than a run-of-the-mill coffee creamer and has less additives and no preservatives added to it. Also, because approximately 75% of the world’s population loses the ability at some point to digest lactose (the major carb in milk and dairy), some people swear by cutting out dairy for health reasons. I personally cannot give up dairy completely, you can try pry cheese from my hands. But I do like to make swaps occasionally to cut down on some of my dairy consumption. Coconut milk is really high in fat (13 grams of fat in 1/3 cup)– most of it being saturated fat. If you like to give your coffee an extra health boost though, I love to add a scoop of collagen and probiotic powder to my morning cup! You can read more about the supplements I take in this post.

4 Ingredient Non-Dairy Coffee Creamer

Ingredients

  • 1 can (13.5 oz) unsweetened coconut milk
  • maple syrup to taste
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract

Instructions

  1. Combine all ingredients into a jar, top with secure lid, and shake to combine.

  2. Add as desired to coffee and store in refrigerator (good for about 4-5 days).

Since I’m not checking my blood sugars rn, I’m trying my best to count carbs, adjust my portions, and make low-carb swaps where I can, with the knowledge that IF I get a diagnosis this pregnancy, I may have to adjust this diet further to reach my blood sugar goals. I do think this is a good way to ease myself back into the diet in case I do test positive again. I’m still letting myself enjoy what I want rn but I’m adjusting my portions and making low-carb swaps where I can! After having a difficult first pregnancy and difficult postpartum, getting to a place mentally to feel ready for another pregnancy/postpartum took more time than I ever expected, and consumed me with a lot of anxiety. And then I faced conflicting feelings of sadness of not having the smaller age gap we originally hoped/wanted for our kids. Thankful for a supportive husband, 📣 THERAPY 🗣️, prayer, and friends who listen, to work through the hard stuff, get to a better mental space, and to feel peace to do this again.

This baby is truly so loved already and we cannot wait!!

RASPBERRY FUDGE POPSICLES 🥑🍫
Raspberry Part:
-~6 oz of fresh/frozen raspberries
-2 tbsp of sugar (I used coconut sugar)
•add raspberries and sugar to a saucepan over medium heat. Cook and let boil for about 5-7 minutes, stirring often to get a jammy consistency

Chocolate Part
1 avocado
1/2 cup milk
2-3 tbsp cocoa powder (depending on how chocolatey you want it!)
Splash of vanilla
Pinch of salt
Maple syrup to taste
•add all to a blender and blend until smooth

•layer chocolate and raspberry portions in a popsicle mold. You can use a toothpick or wooden skewer to swirl the layer a bit before adding sticks and freezing for at least 6 hours
•you may need to run warm water outside of your molds to help remove the popsicles when you’re ready to enjoy ❤️

This makes 6 popsicles with the molds I have but it may vary depending on the size you are using. You also may have leftover raspberry sauce!! It’s really good on Greek yogurt for a parfait or on ice cream 😉 #healthydessert #kidrecipes #toddlermom #easyrecipe
