Avocado Club Egg Rolls Inspired by California Pizza Kitchen

Food

Jump to Recipe

Our first apartment was about a block from a California Pizza Kitchen, and while they have some pretty good pizza at CPK, the best thing on the menu? The Avocado Club Egg Rolls. They are egg roll wrappers stuffed with chicken, bacon, tomatoes, cheese, and avocado before being deep fried to perfection. And you serve them up with some spicy ranch? I am drooling while typing this.

Avocado Club Egg Rolls Inspired by California Pizza Kitchen

I recently realized I had some egg roll wrappers in our freezer from a previous recipe, and for some reason was craving CPK’s avocado club egg rolls! I made this recipe easier by using rotisserie chicken from Costco instead of cooking my own chicken, but you could use whatever kind of cooked chicken you like.

I do think that the official California Pizza Kitchen avocado club egg roll calls for Monterey jack cheese instead of pepper jack. Because I was using rotisserie chicken, which is relatively plain, I think the pepper jack was perfect because it added a bit more flavor. Pepper jack cheese is essentially Monterey jack cheese with peppers added to it. I don’t think it is very spicy, but if you are super super sensitive, just opt for Monterey Jack!

How to Make Avocado Club Egg Rolls

Equipment Needed

Deep Skillet

I use this exact Cuisinart skillet for this recipe because it has tall sides for frying oil

Cooking Thermometer

I use a cooking thermometer almost exactly like this one to monitor the temperature of my oil. The temperature will drop when you add the egg rolls, so I can turn up the heat to try to keep it close to 375 all the time.

Stainless Steel Slotted Spoon, Tongs, or Spider Skimmer

Because you are cooking with hot oil, avoid using plastic utensils unless you want to risk them melting! I recommend using tongs to be able to flip the egg rolls in the oil and to remove them from the oil and transfer them.

Ingredients In Avocado Club Egg Rolls

  • Egg roll wrappers (I generally use this brand)
  • Cooked chicken: I use rotisserie chicken from Costco but you can prepare the chicken however you desire!
  • Cooked bacon
  • Pepper jack cheese
  • Tomato: I used quartered grape tomatoes, but you could use a roma tomato instead!
  • Avocado
  • Vegetable oil
  • Egg
  • Spicy ranch for serving (I especially like the Aldi Organic Spicy ranch)

How to Roll The Egg Roll

How to roll an egg roll

Lay an egg roll wrapper on a plate in front of you with a corner facing you. Using a pastry brush or your finger, brush the egg wash along all 4 sides of the wrapper.

Place a bit of the chicken, cheese, bacon, tomato, and avocado into the lower third of the wrapper, being sure not to over fill and leaving about an inch gap from the sides of the wrapper.

Fold the corner closest to you up towards the corner farthest from you, tucking the filling into a tight bundle. Fold the side corners over towards one another and the roll towards the farthest corner until all the corners are sealed.

Set aside and repeat with remaining rolls.

Avocado Club Egg Rolls

Servings 10 rolls

Ingredients

  • 10 egg roll wrappers
  • 2 cups cooked chicken chopped
  • 4 slices cooked bacon chopped/crumbled
  • 1 cup pepper jack cheese shredded
  • 1/2 cup tomato chopped
  • 1 avocado sliced
  • vegetable oil for deep frying
  • 1 egg
  • ranch or spicy ranch for serving

Instructions

  1. Fill a deep skillet with a couple inches of vegetable oil and begin to heat over medium heat, aiming for a temperature of 375 degrees

  2. Crack the egg into a small bowl and whisk with a splash of water to make your egg wash.

  3. Lay an egg roll wrapper on a plate in front of you with a corner facing you. Using a pastry brush or your finger, brush the egg wash along all 4 sides of the wrapper.

  4. Place a bit of the chicken, cheese, bacon, tomato, and avocado into the lower third of the wrapper, being sure not to over fill and leaving about an inch gap from the sides of the wrapper.

  5. Fold the corner closest to you up towards the corner farthest from you, tucking the filling into a tight bundle. Fold the side corners over towards one another and the roll towards the farthest corner until all the corners are sealed.

  6. Set aside and repeat with remaining rolls

  7. Working in batches of about 2-4 rolls (depends on the size of your pan), carefully add the egg rolls into the hot oil. Cook for about 1-2 minutes until golden brown before flipping to other side and cooking for an additional 1-2 minutes.

  8. Carefully remove egg roll and transfer to paper towel lined plate to drain excess oil.

  9. Repeat with remaining egg rolls.

  10. Serve while hot

📍Win Son Bakery (East Village)
We both got the BEC which had the CRISPIEST bacon, egg, and havarti cheese and it came with their ginger deluxe sauce. I NEED to figure out the recipe to recreate the sauce because it was amazing 🥲
I also got their 5 spice latte which was so tasty and I loved that it wasn’t super sweet! #pregnancy #pregnancycraving #nyc

After having GD with my first pregnancy, I am SO relieved to not have to check blood sugars and be monitoring this time around— however, I’m still being mindful and conscious of my carbs, because I do think it’s better for me and baby (but I’m not being quite so restrictive now!!)

Breakfast: savory breakfast muffins (recipe on my page!)
Lunch: leftover sheet pan lasagna (recipe by @sara.haven) and raspberries
Snack: jalapeño chips, havarti, and dill pickles IYKYK
Dinner: fish, @brazi_bites, and roasted veggies

I recommend priming your sheets of plywood FIRST, then tracing your outline of the characters and then cutting them out! It makes it easier to see the image if you’re using a projector, and then it’s also easier to see your outline when you start painting!

I love the look of the terracotta pumpkins, but knew I could DIY it for less 😌
Just mix up some baking soda into paint until it forms a gritty paste and apply a couple of coats to a cheap plastic pumpkin. On your last coat while it’s still a LITTLE wet, sprinkle on some additional baking soda and dust it around with a paint brush. #falldecorations #diyhalloween #halloweendecorations

I’ve never been super intentional about decorating I’ve never been super intentional about decorating my bedroom but with baby number 2 on the way, I now recognize that I need a lovely space to rot in the newborn bubble 👶 today I’m tackling bed styling (we have a king sized bed for reference). I made these carb-balanced/blood sugar friendly/hi I made these carb-balanced/blood sugar friendly/high protein breakfast muffins often in my first pregnancy and honestly have enjoyed them well beyond pregnancy! They’re only 5 ingredients and give the bready texture I was missing when I had gestational diabetes. It’s kind of similar to a sausage ball! I normally eat 2-3 muffins for breakfast as each muffin has about 7 grams of carbs and 12 grams of protein!

5-INGREDIENT SAVORY BREAKFAST MUFFINS
* 1 pound of turkey sausage (or whatever type you like)
* 4 eggs
* 1 cup shredded cheddar cheese
* 1 cup Kodiak cake baking mix
* 1/3 cup cottage cheese

Instructions
1. Preheat oven to 350℉ and spray a 12-cup muffin pan with non-stick cooking spray
2. In a pan over medium heat, add the sausage and crumble while cooking. Cook until no longer pink. Remove from heat and allow to cool briefly.
3. In a bowl, crack the eggs and lightly beat. Add shredded cheese, kodiak mix, cooked sausage, and cottage cheese and mix well (mixture will be thick)
4. Fill the 12 prepared muffin cups evenly with the mixture.
5. Bake for about 22-25 minutes or until golden brown on top

Recipe Notes
If meal prepping for the week, store leftovers in a container in the fridge. You can heat by microwaving for about 1 minute. I prefer to reheat them by microwaving a couple for 15-30 seconds and then pop them in the air fryer at 350 for 3-5 minutes.
