75 Medium Challenge: Week 2 Recap (Meal Ideas, Workouts, Inspo)

Week two of the 75 medium challenge, is officially complete! Last week I shared a recap of what I did and ate during the 75 medium challenge and figured I could do the same this week. If you are also doing the 75 medium challenge (or the 75 Hard or 75 soft challenge), hopefully these posts can give you some healthy meal ideas– I know that’s what I sometimes have the most difficulty with!

Day 8/75 (1/3/24)

Starting weight: 140 pounds (day 1) –> 138 pounds (day 8)

Exercise: Gym for weight/strength training: arm day

Reading: Atomic Habits by James Clear

Breakfast: Breakfast burrito with egg, spinach, bell pepper, turkey sausage, salsa, and queso fresco + coffee with collagen mixed in.

Best High Protein Breakfast Burrito (34 grams & Freezer-Friendly!)

Tip: Mixing collagen into my coffee has proven to be the easiest way to sneak extra protein into my diet. You cannot taste it and it also helps with your hair, skin, and nail health!

Lunch: Ham sandwich and apple

Dinner: White chicken chili

Day 9/75

Exercise: Gym for weight/strength training– leg day! Did squats and hip thrusts on the Smith machine, reclined leg press, upright leg press with calf extension, the hip abductor machine, and the glute kick-back machine.

Breakfast: Sweet potato, bell pepper, turkey sausage, spinach and egg hash topped with queso fresco, salsa, and avocado

75 Medium Challenge: Week 2 Recap (Meal Ideas, Workouts, Inspo)

Lunch: Leftover white chicken chili

Dinner: Went out to eat with friends at Texas Roadhouse. It was incredibly hard to say no to their rolls there, so I did indulge in one! I got the smothered chicken with gravy and a side of a baked potato. The smothered chicken was grilled and topped with sauteed onions and mushrooms and a tiny bit of cream gravy– super tasty, and the calories/nutrition on it really wasn’t all that bad!

Day 10/75

Exercise: Rest day

Breakfast: Sweet potato, bell pepper, turkey sausage, spinach and egg hash topped with queso fresco, salsa, and avocado

Lunch: Salad wrap (tortilla filled with a chopped salad that I made of romaine, cherry tomatoes, rotisserie chicken, avocado, black beans, and chipotle ranch dressing)

Dinner: Turkey Burger Bowls– turkey burger with pepper-jack cheese, tomatoes, lettuce, avocado, sauteed onions, on top of roasted sweet potato chunks drizzled with some chipotle ranch sauce

75 Medium Challenge: Week 2 Recap (Meal Ideas, Workouts, Inspo)

Day 11/75

Exercise: Gym for full body workout– chest presses, weighted squats, ab coaster machine, hip adduction machine, shoulder presses

Breakfast: Breakfast burrito with turkey sausage, black beans, egg, spinach, salsa, and avocado

Snack: string cheese

Lunch: Cobb salad from Chick-fil-A and diet lemonade

Dinner: Chicken Bryan (grilled chicken with goat cheese, sun dried tomatoes, and a lemon sauce) at Carrabba’s with a side of pasta and meatballs as an app to start

Day 12/75

Exercise: Gym for arms– rows, delt pull downs, delt flys, hammer curls and pull ups

Breakfast: English muffin with egg, avocado, and turkey sausage

Lunch: Peanut Butter and jelly on sprouted bread with protein bar

Dinner: Salmon with squash casserole (slightly modified Joanna Gaine’s recipe), and roasted Brussels sprouts

Day 13/75

Exercise: 45 minutes on the stationary bike

Breakfast: Kodiak cakes blueberry waffle with coffee with collagen

Lunch: Sandwich with rotisserie chicken, pepper jack cheese, lettuce, avocado, and tomato with side salad

Dinner: Chicken stir fry with broccoli, cabbage, carrots, and spinach with kung pao sauce and rice

Day 14/75

Exercise: 45 minutes of stationary bike

Breakfast: English muffin with egg, turkey sausage, and avocado with side of strawberries

Lunch: Leftover stir-fry

Dinner: Spaghetti squash with ground turkey meat sauce

Overall, I still feel like things are going strong! It’s becoming more of a habit to workout and I dread the “inconvenience” it causes me a lot more. It’s just my routine now! If you are struggling with snacks, here are some healthy and balanced snacks I routinely reach for (especially during this 75 medium challenge!)

Favorite Snacks:

  • String cheese
  • Apples and peanut butter
  • Barebells protein bars
  • Greek yogurt with fruit and granola
  • Yasso greek yogurt bars
  • French onion dip made with greek yogurt and carrots/pretzels

Because I had gestational diabetes in my pregnancy Because I had gestational diabetes in my pregnancy with my son, I’m being carb-conscious while I wait to take my glucose test at about 24 weeks pregnant. I’m roughly following the guidelines I was given back in 2022, but obviously not monitoring blood sugars at this time since I don’t officially have a diagnosis at this time. Hopefully this gives you some meal and snack ideas if you are being carb-conscious or have gestational diabetes! #gestationaldiabetes #pregnancy #whatiatetoday
I had diet-controlled gestational diabetes with my I had diet-controlled gestational diabetes with my first pregnancy, so once I found I was pregnant with my second child, my doctor asked me to go ahead and be “carb-conscious” and try to roughly follow the diet while I wait to do my glucose test at ~24 weeks. 
Since I’m not checking my blood sugars rn, I’m trying my best to count carbs, adjust my portions, and make low-carb swaps where I can, with the knowledge that IF I get a diagnosis this pregnancy, I may have to adjust this diet further to reach my blood sugar goals. I’m also  trying to make my diet as nutritious as possible for myself and baby but in a realistic way! #gestationaldiabetes #whatieatinadayrealistic #pregnancy

I do think this is a good way to ease myself back into the diet in case I do test positive again. I’m still letting myself enjoy what I want rn but I’m adjusting my portions and making low-carb swaps where I can! After having a difficult first pregnancy and difficult postpartum, getting to a place mentally to feel ready for another pregnancy/postpartum took more time than I ever expected, and consumed me with a lot of anxiety. And then I faced conflicting feelings of sadness of not having the smaller age gap we originally hoped/wanted for our kids. Thankful for a supportive husband, 📣 THERAPY 🗣️, prayer, and friends who listen, to work through the hard stuff, get to a better mental space, and to feel peace to do this again.

This baby is truly so loved already and we cannot wait!!

Let’s cook some raspberries up and make some raspb Let’s cook some raspberries up and make some raspberry-fudge pudding popsicles with a secret healthy ingredient 🤫🥑

RASPBERRY FUDGE POPSICLES 🥑🍫
Raspberry Part:
-~6 oz of fresh/frozen raspberries
-2 tbsp of sugar (I used coconut sugar)
•add raspberries and sugar to a saucepan over medium heat. Cook and let boil for about 5-7 minutes, stirring often to get a jammy consistency

Chocolate Part
1 avocado
1/2 cup milk
2-3 tbsp cocoa powder (depending on how chocolatey you want it!)
Splash of vanilla
Pinch of salt
Maple syrup to taste
•add all to a blender and blend until smooth

•layer chocolate and raspberry portions in a popsicle mold. You can use a toothpick or wooden skewer to swirl the layer a bit before adding sticks and freezing for at least 6 hours
•you may need to run warm water outside of your molds to help remove the popsicles when you’re ready to enjoy ❤️

This makes 6 popsicles with the molds I have but it may vary depending on the size you are using. You also may have leftover raspberry sauce!! It’s really good on Greek yogurt for a parfait or on ice cream 😉 #healthydessert #kidrecipes #toddlermom #easyrecipe
