When I was working in an office and even when I started working from home, I started to bore of eating a sandwich every single day– Monday through Friday. These days, I try to mix up what I’m eating (although a lot of time it is leftovers!), so I thought I would share 6 lunch ideas that are not sandwiches if you are looking to mix up your lunch routine!
Mason Jar Instant Noodle Soup
Who doesn’t love those top ramen instant noodle bowls? This is like a homemade, healthy, elevated version of that! This one is great because you can easily meal prep multiple jars– PLUS it’s a healthy lunch and will help you to get in some extra veggies! This is one of my favorite lunch ideas because it is so easy to throw together and is very office friendly.
Pita Pizza
This one is always a favorite at our house and comes together so easily!
I just use a whole wheat pita, top with pizza sauce, cheese, and whatever toppings you desire and pop it in the air fryer at 350 for about 10 minutes and it’s good to go!
Firecracker Salmon in Rice Paper
This one does take a little bit more work and cooking prep, but it’s SO tasty! Salmon and green onions are wrapped in rice paper and pan fried.
Mediterranean Orzo Salad
I love this one because you could prep a big bowl of this summery and veggie packed orzo salad and eat on it for several days! You could even add a protein like grilled chicken.
Caesar Salad Wrap
I know, I know, I’m towing the line of a sandwich here, but it’s a wrap!! Not a sandwich!
To a wrap, I add some shredded rotisserie chicken, romaine lettuce, parmesan cheese, and creamy Caesar dressing!
Costco Chicken Bake Copycat
Also requires a bit more cooking, so may not be ideal if you are short on time, but you could prep a bunch of these, cook them and then refrigerate or freeze and heat up in the air fryer when you are ready to eat!
