Jiffy Corn Casserole with Compound Butter

Ingredients

Casserole

  • 1 box Jiffy Cornbread Mix
  • 1 cup sour cream
  • 1 egg
  • 1/2 cup butter melted
  • 1 can (15.25 oz) corn drained
  • 1 can (14.75 oz can) creamed corn
  • 1 tsp thyme chopped
  • 1 tbsp rosemary chopped

Compound Butter for Topping

  • 3 tbsp butter softened
  • 1 tbsp honey
  • red pepper flakes (optional) to taste

Instructions

  1. Preheat oven to 375°F

  2. Mix all casserole ingredients together and then pour into a greased baking dish (9x9 is ideal)

  3. Bake for 45-45 minutes

  4. While baking mix together the compound butter ingredients. Add red pepper flakes if you like-- they add a little bit of kick to cut through all the sweetness!

  5. Once the casserole is baked, you can top the entire casserole with the compound butter, or serve the butter on the side and people can top their casserole with as much butter as they would like!
