High- Protein Breakfast Burrito

Ingredients

  • 2 eggs
  • 2 tbsp cottage cheese
  • 1 tortilla
  • 2 links chicken sausage
  • 1/2 avocado smashed
  • salt and pepper to taste
  • 1/4 cup black beans cooked
  • butter/oil for cooking

Instructions

  1. In a pan over medium heat, add chicken sausage links with a splash of water and cover with lid. Flip occasionally until heated all the way through (Approximately 5 minutes). Remove from pan.

  2. Into a bowl, crack 2 eggs and mix with cottage cheese. Whisk until incorporated.

  3. In the same pan, add some oil and/or butter and the egg/cottage cheese mixture and scramble to cook until cooked to desired doneness. Turn off heat and season with salt and pepper to taste and add the beans just to warm them a bit.

  4. Assemble burrito by adding chicken sausage, egg/beans, and avocado. I like to top mine with some hot sauce or some spicy salsa!
