Easy One Pan Sausage and Pesto Gnocchi Bake

This 1 dish sausage and pesto gnocchi is officially part of our dinner rotation. It is so easy to assemble and cooks up in just 30 minutes! It tastes so summery and is make completely in the oven, so no need to turn on the hot stove!

This one pot sausage and pesto gnocchi bake also doesn’t have a lot of ingredients, you may already have most of them in your pantry and fridge!

Even though gnocchi is pretty dense, something about this bake doesn’t feel like a super heavy dinner. The tomatoes and spinach make it taste like such a bright summery meal!

FYI, the specific dish I used to make this bake is this 10.5″ x 7 Le Cruset, however, you could use a 9×9 dish instead.

How to Make 1 Dish Sausage and Pesto Gnocchi

  • 1 (16 oz) package gnocchi
  • 1 cup grape tomatoes, quartered
  • 2 cups spinach, roughly chopped
  • 1/2 cup chicken broth, chicken stock, or bone broth

I opt for bone broth (I make homemade using leftover rotisserie chicken bones), because it is a bit healthier than regular chicken broth or stock due to higher collagen and protein content!

  • 4 cloves garlic, minced

If you don’t want to dirty up a cutting board to mince fresh garlic, I love using this garlic press!

  • 1 pinch red pepper flakes
  • 1 tbsp pesto
  • 1/2 pound sausage

I use a raw turkey sausage that is minimally processed from Target, but you can use pork sausage or chicken sausage if you prefer! I would stay away from a pre-cooked sausage though because it might otherwise get overcooked in this dish.

  • 1/2 cup Parmesan cheese, freshly grated

I love freshly grated Parmesan as opposed to the store bought pre-shredded stuff, and this mircoplane is the BEST at grating it so easy.

  1. Preheat oven to 350℉
  2. In a baking dish, add gnocchi, tomatoes, spinach, broth, pesto, garlic, and red pepper flakes and mix everything together with a spoon.
  3. Take small teaspoon sized dollops of the sausage and place evenly all over the top of the gnocchi mixture

4. Cover with foil and bake for 30-35 minutes

5. Remove foil and mix in Parmesan cheese. This will help thicken the liquid into a sauce.

6. Serve hot and enjoy!
