Corn pudding, corn casserole, loaded Jiffy cornbread: whatever you call it, this is one of my favorite Thanksgiving sides! And with Thanksgiving a little over a month away, I knew I had to get this recipe out. The recipe is not groundbreaking, I think a lot of people make some kind of variation of this at thanksgiving– some people include eggs, some don’t, some people include sour cream, and some don’t, etc etc etc. I prefer the versions with egg and sour cream as I think it makes the casserole so moist! HOWEVER, the main change with this version I am sharing is that my variation includes fresh herbs and a compound butter topping. These two simple things really take this casserole to a whole different level.
FYI: Don’t try to get any other cornbread mix other than Jiffy. It’s like $0.99 and works the best!
This casserole is so comforting to me and while I normally associate it with being a thanksgiving side, I will often make it throughout the year because it is TOO good!
Feel free to omit red pepper flakes in the compound butter if you and your family don’t like any spice. I just think it compliments the sweetness of the honey butter really nicely! Or if some people like red pepper flakes and some don’t, instead of topping the entire casserole with the compound butter, you could serve it on the side and let people top it with as much as they please!

Preheat oven to 375°F
Mix all casserole ingredients together and then pour into a greased baking dish (9x9 is ideal)
Bake for 45-45 minutes
While baking mix together the compound butter ingredients. Add red pepper flakes if you like-- they add a little bit of kick to cut through all the sweetness!
Once the casserole is baked, you can top the entire casserole with the compound butter, or serve the butter on the side and people can top their casserole with as much butter as they would like!
