Fall is in the air (although maybe not officially for a few more days), and I am ready for all things pumpkin and autumnal! I love Starbucks pumpkin spice lattes, but to save money, I make coffee at home every day. This homemade simple syrup combines real pumpkin, spices, and brown sugar to sweeten your coffee (or chai!) at home.
I saw and tried several recipes on TikTok to figure out what measurement I liked the best, and so it was most closely to this 1:1:1 ratio from this creator. I do sometimes add some vanilla or vanilla paste to the syrup which cuts through some of the spice!

I just make regular drip coffee or french press every morning and use about a tsp of this with some half & half to sweeten my coffee. However, I mixed it into my chai this morning and it gave it more of a spice “oomph”– so good! This would also be great if you make at home lattes with an espresso machine.
One of the reasons why I like making homemade coffee syrup is that there’s no added preservatives or junk and I know exactly what is going in it! Plus I can use organic ingredients if I want!
Ingredients In Homemade Pumpkin Spice Syrup
Pumpkin Puree — you’ll have some leftover from a can, you can freeze the remainder to use for next time or use it for another recipe!
Water— if you want a thinner syrup, you could add a bit more water
Vanilla Extract or Vanilla Bean Paste — I personally really love vanilla bean paste, it has a stronger vanilla flavor!

Pumpkin Spice Coffee Syrup
Ingredients
- 1 cup pumpkin puree
- 1 cup brown sugar
- 2 tbsp pumpkin pie spice
- 1 cup water
- 1 tsp vanilla extract or vanilla bean paste optional
Instructions

Combine brown sugar, pumpkin puree, pumpkin pie spice, and water in a sauce pan and heat over medium high heat

Once bubbling, reduce to a simmer and simmer for about 5 minutes

Remove from heat and stir in vanilla if using. Let cool before transferring to a clean jar to store in the fridge
