If you’ve been following my 75 medium journey, either in round 1 or in the current round 2, you might notice a pattern of my breakfasts. Being that I eat a breakfast burrito almost EVERY DAY. I’ve been eating this high protein breakfast burrito almost every day for a year and have yet to be sick of it. It’s so customizable and a great way to pack in lots of protein and keep you full until lunch. There’s 1 trick specifically with this burrito recipe that helps to pack in some secret protein. But between chicken sausage, eggs, black beans, and the secret high-protein ingredient, this high protein breakfast burrito clocks in at 34 grams of protein! Plus when I pair it with my morning coffee that I always add 1 scoop of collagen powder (19 grams of protein) to, that’s getting 53 grams of protein at breakfast!!

High Protein Breakfast Burrito Breakdown
2 scrambled eggs or 1/2 cup of egg whites (12 grams of protein)
SECRET INGREDIENT: 2 tablespoons cottage cheese (7 grams of protein)
1/4 cup black beans (4 grams of protein)
2 links of chicken sausage or piece of turkey bacon (6 grams of protein)– I get these organic ones from Costco, but they have a non-organic one at Target
1 tortilla (3 grams of protein)
1/2 avocado (2 grams of protein)
Total Protein in Burrito = 34 grams!
Swaps and Ways to Add More Protein
Cheese: you could add 1/4 cup of shredded Mexican cheese or 1 oz of crumbled queso fresco to add an additional 6 grams of protein
Egg Whites: if you are watching your cholesterol levels, try swapping the 2 eggs for 1/2 cup of liquid egg whites
Protein tortilla: swapping a regular tortilla for these protein tortillas will give you an additional 4 grams of protein

How to Make a High Protein Breakfast Burrito
- In a pan over medium heat, add chicken sausage links with a splash of water and cover with lid. Flip occasionally until heated all the way through (Approximately 5 minutes). Remove from pan.
- Into a bowl, crack 2 eggs and mix with cottage cheese. Whisk until incorporated.
- In the same pan, add some oil and/or butter and the egg/cottage cheese mixture and scramble to cook until cooked to desired doneness. Turn off heat and season with salt and pepper to taste and add the beans just to warm them a bit.
- Assemble burrito by adding chicken sausage, egg/beans, and avocado. I like to top mine with some hot sauce or some spicy salsa!
Freezing and Reheating Breakfast Burrito
My husband loves to eat a breakfast burrito on-the-go in the morning when he goes into office, so I like to make him these and keep them in the freezer so he can easily heat one up and take it on his way out. I make them the same way, but I leave out avocado (because I don’t think it freezes and reacts well to being microwaved!). I let the burrito cool down and then wrap each one up in a paper towel and store that in a freezer ziploc bag.
When my husband goes to heat it up, he takes one out of the ziploc and places the paper-towel wrapped burrito on a plate and then microwaves it for 1 minute on each side or until it is warmed all the way through. If you have some extra time, put it in the air fryer for about 10 minutes after you microwave it for a minute or two and it will be extra tasty and crispy!
