Baked Brie with Apricot Preserves and Pecans

It’s been a while since I shared a recipe on here! This baked brie is a 5 ingredient recipe so it’s very simple and doesn’t require a whole lot of effort. Despite being the easiest possible appetizer, it always impresses and seems a lot fancier than it actually is. And who can say no to melted cheese!?

Sunday nights were always a “free-for-all” night growing up– meaning, we kind of ate random stuff hanging around the house (leftovers, popcorn, chips and guac, random appetizers). My parents love baked brie and they normally always have it hanging out in the fridge as a quick appetizer for friends, or Sunday night dinners when we don’t want to make a real meal. My parents always wrapped their brie in puff pastry and baked it, but since I like to eat my baked brie with crackers or bread, I tend to avoid the puff pastry when I make it now.

I like to serve my brie with triscuits, toasted slices of baguette, and apple slices.

Here’s a tip when purchasing brie:

  • Enjoying brie when it is on or very near it’s sell by date will result in more full flavored brie
  • Brie about 10 days before it’s sell by date is soft & buttery
  • Brie abut 20+ days before it’s sell by date is more mild and smooth.

For this recipe, I like to use mine a couple weeks before it’s sell by date, but if you enjoy very full bodied brie, by all means, enjoy it closer to it’s sell by date!

Since I don’t use puff pastry, you do need a smaller dish to bake your brie in. You could bake it in a container larger than the brie, but just know that the brie will melt and won’t look nearly as pretty. I got my brie dish from my mother-in-law who bought it from a pottery studio in the Outer Banks, but I found some cute inexpensive brie dishes on Amazon!

Here’s the recipe!:

Baked Brie with Apricot Preserves and Cinnamon Pecans

Course Appetizer
Prep Time 5 minutes
Cook Time 10 minutes

Ingredients

  • 1 wheel brie
  • 1/4 cup apricot preserves
  • 1/4 cup pecans
  • 1 tbsp butter
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 375

  2. In a saucepan, melt the butter over medium low heat. Add the pecans and cinnamon and toast for 2-3 minutes

  3. Use a knife to carve off the top rind of the brie wheel.

  4. Place brie in your brie baker and top with apricot preserves and pecan mixture. Bake in oven for 10-15 minutes until melted

  5. Enjoy!
