Favorite Things: Vol. III

We finally made it to February, y’all! Anyone else feel like January was 7 years long? I just cannot wait until it gets a little warmer out!

I’ve made a few things for potlucks in the past week, so I figured I would include them in my Favorite Things for this week. Pinterest is just like the greatest gift that was given to us. I mean my first things is Garlic, Bacon, and Beer Mac & Cheese Balls (!!!!!!!!!!!!) and I don’t think I would have found such a beautiful creation without the help of Pinterest.

I made them for a Superbowl party last week and they were a HIT! A trial run was done once a couple days prior to the party, so that they would be perf when i brought them to the party. I didn’t use bacon because I honestly didn’t think they needed it! Like trust me there is enough fat in these suckers that bacon is unnecessary (THERE I SAID IT).

I made a few changes, like I felt that the panko needed to be seasoned, so I added a bit of paprika, salt, and pepper to the panko. I also added a couple of tablespoons of hot sauce to the egg wash mixture. You seriously won’t regret making these. They will be a hit with everyone I guarantee it!

My second favorite is this chunky lace-up sweater that I got at the AE Outlet here in Charlotte. It’s on sale online rn for $17.98 (you’re welcome world!!!!)

I got it in light blue (def thought it was light grey when I bought it–but not mad about it). It’s cozy and I’ve already received lots of compliments on it!

Next up we have the Easiest Tres Leches Cake Ever!

We had a Mexican themed potluck at work last week, so I decided to be ambitious and make tres leches cake. I had tried tres leches a few other times before– the best time being when I studied abroad in Guatemala for a summer. AMAZING.

It’s really not hard to make either. This was the easiest recipe I found, and didn’t really require cream. Instead of making homemade whipped cream like I should have, I just used store bought. Since I get home from work late and then leave super early in the morning, this is perfect for a potluck because you can easily make it with a boxed cake mix, and then let it sit in the fridge over night. Then I just topped it with store-bought whipped cream and cocoa powder before I left for work. I barely had any leftovers!
