Favorite Things: Vol. XXVII

Favorite Things

Happy Friday! This is my third week completed of doing night shift now, and I feel like I’m finally starting to adjust. But I’m quite happy to be at the weekend now and to go out of town next week!

Let’s go ahead and get to it then; here’s a few things that I have been loving recently 🙂

Nail Color: Passion by OPI

Got my nails done with the color passion again which is like the perfect coral/pink for summer! I keep getting it not realizing I’m getting the same color so frequently, but I think there is a reason I always gravitate to it.

French Onion & Bacon Risotto

Conquer your fear of making risotto at home—it’s time. Sure, risotto fares a little on the fancy side, but it’s totally doable and more worth it than ever, thanks to this version filled with caramelized onions and topped with crispy bacon.

I recently had some AMAZING risotto on our recent trip to Lynchburg, VA, and it has been on my mind ever since. Considering trying this recipe out soon 🙂

Garden Update

For anyone following our new home saga, we have been planting like crazy since NC has blessed us with cool, rainy weather. Our grass isn’t the happiest rn, but I know it’s going to look amazing next year!

In our front garden beds, I have planted salvia, baby gem boxwoods, and wedding white hydrangea bushes. I also replaced the pine needles with black mulch, and added garden bed trim.

For our front door, we added these two faux wood planters, and in each I added a dwarf hydrangeas, Boston fern, and some sweet potato vine! I like the look of it now, but I cannot wait to see it with blooms on the hydrangeas next year. We also got a ring doorbell (because I get nervous being home alone haha) and a cute welcome mat!

New Couches

We bought two of these IKEA Ektorp sofas in Lofallet beige. They are under $400 each and a pretty good size! We got two to sit parallell to each other and then we are planning on buying a couple chairs for our living room as well. So far, we really like them, and its nice having slipcover couches that you can easily wash if needed. I’m sure I will do a review of them once we have had them a bit longer, but for now, I’m really happy with them, especially considering the price!

Have a great weekend!

(P.S. If you buy anything through my links, I may earn a small commission) 🙂

Guess who doesn’t have gestational diabetes? 🙂‍↕️ Guess who doesn’t have gestational diabetes? 🙂‍↕️
After having GD with my first pregnancy, I am SO relieved to not have to check blood sugars and be monitoring this time around— however, I’m still being mindful and conscious of my carbs, because I do think it’s better for me and baby (but I’m not being quite so restrictive now!!)

Breakfast: savory breakfast muffins (recipe on my page!)
Lunch: leftover sheet pan lasagna (recipe by @sara.haven) and raspberries
Snack: jalapeño chips, havarti, and dill pickles IYKYK
Dinner: fish, @brazi_bites, and roasted veggies
Bedtime snack: @fairlife chocolate milk always 🍫🥛

I recommend priming your sheets of plywood FIRST, then tracing your outline of the characters and then cutting them out! It makes it easier to see the image if you’re using a projector, and then it’s also easier to see your outline when you start painting!

DIY FELT BIRTHDAY CROWN 🎉🥳🥹 I made two of these th DIY FELT BIRTHDAY CROWN 🎉🥳🥹
I made two of these this year, one for my dad for his 80th (lol) and another for my toddler! I thought it was super a cute keepsake, and not very difficult, so I’m definitely going to keep making these for kid’s birthdays! 🥹 #birthdaycrown #keepsakegifts #birthdaytradition #slowliving #toddlermom
DIY “Terracotta” Pumpkins 🎃 I love the look of th DIY “Terracotta” Pumpkins 🎃
I love the look of the terracotta pumpkins, but knew I could DIY it for less 😌
Just mix up some baking soda into paint until it forms a gritty paste and apply a couple of coats to a cheap plastic pumpkin. On your last coat while it’s still a LITTLE wet, sprinkle on some additional baking soda and dust it around with a paint brush. #falldecorations #diyhalloween #halloweendecorations

I’ve never been super intentional about decorating I’ve never been super intentional about decorating my bedroom but with baby number 2 on the way, I now recognize that I need a lovely space to rot in the newborn bubble 👶 today I’m tackling bed styling (we have a king sized bed for reference). I tried my best to keep it on a budget bc WHYYYY are pillows so expensive??? #bedroomstyle #pregnancy #roommakeover
I made these carb-balanced/blood sugar friendly/hi I made these carb-balanced/blood sugar friendly/high protein breakfast muffins often in my first pregnancy and honestly have enjoyed them well beyond pregnancy! They’re only 5 ingredients and give the bready texture I was missing when I had gestational diabetes. It’s kind of similar to a sausage ball! I normally eat 2-3 muffins for breakfast as each muffin has about 7 grams of carbs and 12 grams of protein!

5-INGREDIENT SAVORY BREAKFAST MUFFINS
* 1 pound of turkey sausage (or whatever type you like)
* 4 eggs
* 1 cup shredded cheddar cheese
* 1 cup Kodiak cake baking mix
* 1/3 cup cottage cheese

Instructions
1. Preheat oven to 350℉ and spray a 12-cup muffin pan with non-stick cooking spray
2. In a pan over medium heat, add the sausage and crumble while cooking. Cook until no longer pink. Remove from heat and allow to cool briefly.
3. In a bowl, crack the eggs and lightly beat. Add shredded cheese, kodiak mix, cooked sausage, and cottage cheese and mix well (mixture will be thick)
4. Fill the 12 prepared muffin cups evenly with the mixture.
5. Bake for about 22-25 minutes or until golden brown on top

Recipe Notes
If meal prepping for the week, store leftovers in a container in the fridge. You can heat by microwaving for about 1 minute. I prefer to reheat them by microwaving a couple for 15-30 seconds and then pop them in the air fryer at 350 for 3-5 minutes.
