75 Medium: Week 11 (FINAL WEEK!) Recap, Meals, Workouts, and Tips

75 Medium· Health

I have now completed my FINAL WEEK (!!!!) of 75 medium (a fitness challenge somewhere between 75 hard and 75 easy), so it’s time for a recap of what I ate, what workouts I completed, and how things went. I share all this so that if you are in the same boat, you may get some meal inspiration and some solidarity whether you are participating in 75 easy, 75 medium, or 75 hard (or just trying to start making healthier choices without putting a label on it!). I’ll be posting a finale recap post with my before and after photos soon, so stay tuned!

Day 71

Breakfast: breakfast burrito with chicken sausage, egg, beans, and avocado + coffee with collagen

Best High Protein Breakfast Burrito (34 grams & Freezer-Friendly!)

Lunch: at home version of viral chick-fil-a order of hot honey chicken and kale salad

Dinner: spaghetti

Exercise: gym for strength training (focus on arms)

Day 72

Breakfast: Kodiak cake blueberry pancakes + coffee with collagen

Lunch: pulled pork on sourdough toast with pickles and an apple

Dinner: salmon with cauliflower rice and roasted brussels

Exercise: stationary bike for 35 minutes

Breakfast: sprouted oatmeal with peanut butter, honey, bananas, and chia seeds

Lunch: Greek yogurt with granola, honey, and strawberries

Dinner: crockpot chicken with parmesan garlic wing sauce, broccoli, and cauliflower fried rice

Exercise: active recovery day

Day 74

Breakfast: protein sausage muffins and apple

Protein Packed Sausage Breakfast Muffins (Easy & 5 Ingredients!)

Lunch: chicken burger on sourdough toast with avocado

Dinner: homemade chicken pitas (whole wheat pitas) and roasted zucchini

Well truthfully I am happy for this to be over! I do feel great and I feel like this challenge has reset my habits so that I am more active, but it’s nice to have a bit more flexibility when I am not doing this challenge! I will be posting a full recap with before and afters soon, so stay tuned!

Note: I did end up donating the formula elsewhere— I didn’t want to leave it outside because extreme temperatures can mess with the integrity of formula!

I took my toddler to the grocery store so we could pick out some shelf stable foods that are also good sources of protein. We made a couple of shelf stable birthday cake kits (everything included to make a cake!) and also donated a bunch of diapers that we no longer had use for! 
I really want to start doing this more often, because it caused my son to ask a lot of good questions and we were able to have a good talk about helping others ❤️
I know this is a very small action to take in ligh I know this is a very small action to take in light of cut SNAP benefits and the government shutdown, but I do think small actions can add up to big ones!
