Wanted to share the EASIEST fall treat recipe you will stumble across this season– 3 ingredient pumpkin spice muffins! Fall is officially in the air which means it’s time for pumpkin spice goodies. This truly could not be an easier recipe to whip together, and they turn out SO moist and delicious. This recipe is customizable too! You can swap out the dark chocolate for pecans, walnuts, raisins, or whatever else you are feeling. Instead of making these as muffins, you could add the batter to a loaf pan and make this a pumpkin spice bread. You could even make a crumble topping for these muffins! Or you could make these more of a cupcake situation and top with cream cheese frosting 🙂
All you do is mix together a can of pumpkin puree, a box of spice cake mix, and a cup of mix-ins (I did dark chocolate morsels).
Then I just baked at 350 for 16-20 minutes. I stuck a toothpick in one and then removed it and I knew it was done once the toothpick came out clean!
I wish I could remember the TikTok video where I originally saw this idea, but it looks like there’s a bunch of different variations of this 3 ingredient treat floating around on the internet.
Tips
The batter is going to be REALLY thick, so I used my handy dandy ice cream scoop with a trigger release to scoop the batter into my muffin tin! This made it so much easier and cleaner! The ice cream scoop I use holds I think 1/4 cup, and it made about 12 muffins.
3 Ingredient Pumpkin Muffins
Ingredients
- 15 oz pumpkin puree
- 1 box spice cake mix
- 1 cup dark chocolate chips
Instructions

Preheat oven to 350°

Mix all ingredients together

Line muffin tin with muffin liners and spray with cooking spray

Scoop batter into muffin tin (I did about ¼ cup in each)

Bake for 16-20 minutes (or until you can insert a toothpick and it will come out clean)
